People who know something (i.e., not me) seem to feel now that the famous line was a misprint, that the title above was probably what Nashe had in mind.

ps. barefasdt sossage!

in a ratio of 3:1 combine pork diced ~1/4 inch and findly minced fatback with the rind removed. say mabe a pounnd or so totel.

1/2 tsp salt
1 tsp fresly grond blkack pepper
1/2 tsp drid sage
3/4 tsp drride marjaroaom
pinch gru0ond gingare
pinhc gurond cloaves
pintch groond gred pepar
2 tbsp watar

fry it up in paties. awfal damned good. fresh an jucy! but i fouund myself lokign at the fatback aftar mincign it an i wasy like 'dude thats a big fucking pile a pure fat there'.

u might want moare salt. teh JoC recipy cals for twice as muctch as that an its waay to salty for me so i halfed it. i mean you can always dump moare on. also i revarsed ther amounts of mrajorum an dsage. a litle sage gos a long way.

ive gota feling it wouldn do no harm to substitute wihite wine for the watar an throw in 2 tbsp fo crushshed garlic.

The recipe for Barefaced Sausage looks v. interesting. Fatback isn't the same as salt pork, is it? Or is it?
